I was introduced to this salsa {…is that what we shall call it?} last year. I loved it and then I forgot about it.
That happens when you have 4,386,012.3 things simultaneously going on in life.
Well, lucky for you, I was reacquainted with this deliciousness last week while at work. I immediately, and awkwardly, asked for the recipe via email. I then, immediately and awkwardly, replied to the response with, “Can I feature this on my food blog?”
I can only imagine the raised eye-brow/what’s going on/ huh? face when they read that.
But they gave me the go ahead. Wahoo.
So I stopped the 4,386,012.3 things I was doing to immediately make this. And eat it. And share it. And now blog about it.
Rinse and drain the beans and corn.
Chop the pepper, onion and pimentos.
Combine beans, corn, pepper, onions and pimentos in a large bowl.
In a medium sauce pan combine oil, vinegar and sugar.
Bring to a boil.
Pour over bean mixture. Stir.
Cover and refrigerate overnight.
Serve with your favorite tortilla chips.
A bit sweet {from the dressing!}. A bit crunchy {from the veggies!}. A bit creamy {from the beans!}. It’s that deliciousness I spoke of above.

Ingredients
1 15 Oz. can pinto beans
1 15 Oz. can black beans
1 15 Oz. can black eyed peas
1 15 Oz. can corn kernels
1/2 Green bell pepper, chopped
1/2 Red onion, chopped
1 7.5 Oz. jar pimentos, drained and chopped
1/4 Cup vegetable oil
1/4 Cup apple cider vinegar
1/4 Cup sugar
Directions
Drain and rinse black beans, pinto beans, black eyed peas and corn.
Chop green bell pepper, red onion and pimentos.
Combine beans, corn, pepper, onion and pimentos in a large bowl.
Combine oil, vinegar and sugar in a medium sauce pan. Bring to a boil, stirring occasionally.
Pour liquid over bean mixture. Stir.
Cover and refrigerate overnight.
Serve chilled or at room temperature with tortilla chips

This bean salsa sounds divine! Love all the vegetables in it and it sounds pretty simple to put together. I’ll have to try it this week and add lots of hot spices!
