Just about anyone and everyone out there that buys their own groceries, that pays their own bills, that has a job…they’re on a budget. They don’t let even a dime go to waste. Same goes for food. I hate throwing produce away. HATE it. I avoid it at all costs. So, when I had some kale leftover from last week’s soup, I had to use it.
Except, while I’m pretty frugal, I’m also ridiculously indecisive. I didn’t know what to make…
Main dish? Salad? Side?
And then I realized I had no more than 30 minutes before I had to be running out of the house.
Garlicky Kale & Potatoes it is.
I mean, it was. Because it’s practically gone. Because I used what was left in another new recipe that I’ll be sharing soon.
That’s the fun part about cooking…making it all work. Whether you’re working within your budget, whether you’re working with what you’ve got in the fridge, or whether you’re working in a time crunch…it’s always an adventure and I love it.

Ingredients
2 Cups fingerling potatoes, cut 1/4-1/2″ thick {about 8 potatoes}
2 Tablespoons butter {or ghee!}, divided
2 Garlic cloves, minced
1/2 Teaspoon garlic powder
3 Cups chopped kale
1/2 Teaspoon lemon juice
Salt & Pepper
Directions
In a large pan, melt 1 tablespoon of butter over medium heat. Add fingerling potatoes and season with salt and pepper. Sauté in pan for about 10 minutes, flipping occasionally, until all are cooked through.
Add garlic and 1 tablespoon butter, stirring until melted.
Add garlic powder and kale. Stir. Cook until kale is wilted {3-5 minutes}.
Sprinkle with lemon juice. {Add additional salt and pepper if necessary.}
Serve hot.
