Remember how last week I mentioned what inspires me in the kitchen? And then I named all kinds of people and other examples?
I lied. {Kind of.}
I had no inspiration this weekend when cooking. I was busy. And still battling that cold. But still wanted to make a few things to meal prep and share on ESJ. So, giving myself 15 minutes at the grocery store, I grabbed whatever I felt like eating this week. Asparagus, arugula, almonds, prosciutto, Lara bites, etc. and then just thought…new nut butter?
…and thought…arugula salad?
…and then decided on these. Knowing I’d be getting some Turkey Dinner leftovers on Sunday, I figured a good veggie dish would help with lunches.
No inspirations. Just some practicality and a time crunch.
And a delicious, uninspired, in-a-hurry recipe that I’m in love with.

Ingredients
1 Bundle of asparagus
2 Teaspoons olive oil
Pepper {1/8-1/4 teaspoon}
1/4 Teaspoon garlic powder
4 Slices of prosciutto, cut in half lengthwise
2-3 Tablespoons balsamic reduction {I used this brand.}
2-3 Teaspoons sesame seeds
Directions
Preheat oven to 450′.
Wash and trim asparagus {using a kitchen knife or snapping off the ends}. In a medium bowl or in the produce bag, return asparagus and add oil, pepper and garlic powder. Stir/shake until evenly coated.
Take a piece of prosciutto and wrap it tightly around 3-5 pieces of asparagus {depending on size of spears}. Place on a baking sheet. Repeat with remaining prosciutto and asparagus – making approximately 8 bundles.
Bake in the oven for 15 minutes, flipping halfway through.
Place on serving dish and drizzle with balsamic reduction and sprinkle with sesame seeds.
Serve immediately.

Sometimes the most simple and unplanned dishes end up being just as good as those that took days to plan. I do like asparagus served as a whole, and with the prosciutto, you have a wonderful contrast in flavours.
