Um, so it’s another snow day over here.
A foot of snow is casually falling from the sky and I’m just here on my couch, watching the news and listening to my neighbors shovel.
I should probably go and shovel. And I probably will. But not before I share this new recipe with you.
Because it’s so flipping good.
Gah! And it’s a one pan-er! {Unless you count what you use to make the cilantro and lime rice. Let’s not get particular though. K?}
I love making “bowls” of any and all sorts. They make for awesome meal prep lunches, they’re always delicious and they’re pretty versatile. And because I love this chicken fajita recipe from last year so much, I was completely inspired to make a stovetop bowl version!
Because I’m completely random like that.
Inspiration at its best, because this is the best. It’s made for the best lunches this week.
I love winter. I love snow. I love my little corner of the internet. I love this recipe.

Yields 4-6 servings
Ingredients
2 Lbs boneless, skinless chicken breasts – cut into 1″ pieces
1 1/4 Teaspoon cumin
1 1/4 Teaspoon chili powder
3 Garlic cloves, minced – divided
4 Tablespoons olive oil
2 Tablespoons butter or ghee – divided
3 Bell peppers, seeded and sliced {I used on green, 1 red, 1 yellow}
1/2 Red onion, sliced
1 4.5 Oz can roasted green chiles
1 Jalapeno, seeded and diced {optional}
Salt
1 Batch Cilantro & Lime Cauliflower Rice or Cilantro & Lime Rice
Optional:
Lime wedges
Avocado slices
Chopped cilantro
Directions
Add cumin, chili powder 2 garlic cloves, olive oil and chicken to a large ziploc bag. Seal shut and mix until chicken is well coated. Let sit in the fridge for at least one hour.
When ready to cook, melt one tablespoon of butter or ghee in a large pan over medium heat. Add peppers, onion, jalapeño, 1 garlic clove, green chiles and 1/2 teaspoon salt. Stir to combine and cook until peppers have softened a bit, about 10 minutes {continuing to stir occasionally}.
Remove vegetables from pan and set aside. Melt remaining butter {or ghee}, scraping up any bits on the bottom of the pan and add chicken. Cover and cook until chicken is cooked through, stirring occasionally. Add vegetables back to pan, stir to combine. Cook until vegetables are heated through. Season with additional salt if necessary.
Serve over cilantro and lime rice/cauliflower rice. Top with fresh lime juice, avocado and cilantro.

It’s snowing here too. We’re having a Nor’Easter and I won’t be shoveling until tomorrow. I hate going out more than once. I think it’s sweet that you still love snow. I’m jaded, so I don’t anymore. Unless it was an inch of snow. Snow just makes me cold, But I bet these chicken fajita bowls would warm me right up and satisfy me! Mmmm.
I just love the snow, Elaine! Voluntarily shovel just to get outside for some fresh air and exercise…not many people agree with me but I think it’s the best :)

Yum! I’ll happily devour anything with chicken fajita in the title! I’ll also happily say…better you than us when it comes to the snow! Sorry…not sorry! 😉 I’ll grant it’s beautiful, but sure wish it’d only fall on grass and trees – not streets, sidewalks, and driveways too!

It’s tough to stay warm right now with nor’easters coming through, but I think this great chicken fajita bowl would at least remind me of nicer weather! It looks yummy and I love all the colors of the peppers. :)
