I went for a run outside today. {Your eyes are rolling, I get it…}
But seriously! The snow has melted, the New England weather wasn’t freezing and it was still sunny by the time I got home from work. Ahhh! {sigh} It’s the little things. Baby steps. Spring is right around the corner and I can taste summertime already!
And ya wanna know what that tastes like?
Mojitos. Mmmm hmmm. After last week’s vacation to Key West, where I indulged and enjoyed a couple of mojitos by the pool, I immediately came up with a few {three!} new variations that I ab.so.lute.ly plan on enjoying on the lake this summer.
Except I can’t wait for summer…and made the recipes a few days back. And am sharing them today. Fully aware that it is still, technically, winter. Minor detail. Let’s just call it planning ahead.

Each variation yields 4 cocktails
Ingredients
Pomegranate Mojito:
12 Mint leaves
2-3 Limes, cut into wedges
2 Tablespoons plus 2 teaspoons simple syrup
6-8 Ounces rum
1 Cup pomegranate juice
2 Cups ice
2 Cups soda water
Coconut Mojito:
12 Mint leaves
1 Lime, cut into wedges
2 Tablespoons plus 2 teaspoons simple syrup, divided
6-8 Ounces coconut rum
1/2 Cup coconut water
2 Cups ice
2 Cups soda water
Pineapple Mojito:
12 Mint leaves
1 Lime, cut into wedges
2 Tablespoons plus 2 teaspoons simple syrup, divided
6-8 Ounces rum
1 Cup pineapple juice
2 Cups ice
2 Cups soda water
Optional garnishes:
Lime wedges
Mint leaves
Pineapple slices
Pomegranate seeds
Directions
Divide mint leaves, lime wedges and simple syrup evenly between 4 mason jars. Using a wooden spoon, muddle to release and combine flavors. Add juice/water and ice to each jar. Replace lids on jars and shake to combine. Top with soda water and garnish with additional mint, fruit or citrus. Serve immediately
Bonus recipe!
Substitute coconut rum in the Pineapple Mojito for a pineapple coconut cocktail….amazing.

I love Mojito’s. Try using La Croix flavored sparkling water in them instead of the soda water. It’s fantastic.
