I made a summer goal of saying “no” to people in an effort to be less busy and as the summer is coming to an end {at least for me…full on teacher mode}, let’s reflect… Was my summer a bit more relaxing?
No.
Absolutely not.
I just don’t understand! I try and say no to invitations, but then FOMO sets in. I try and say no to gatherings with friends and family, and then I realize how lucky I am to have these people in my life. I even try saying no to relaxing things, like a day at the beach or lake, so that I can be at my house for a change…and then, why would I want to be home when I can be in the sunshine?!? Amirightoramiright?
So, here I am, sitting on my couch on August 21st declaring that I did not relax one bit this summer. It was busier than ever. I didn’t even make a dent in my summer bucket list, and I’m a-okay with that because it’s been a great past few months. Just busy, really busy.
And during these busy months, I’ve neglected ESJ a bit, not because I didn’t want to share food and fun with you guys, but really, I didn’t have wifi and/or time on most occasions where I may have actually had a few minutes to write on here. No regrets, but now that {my} summer is winding down and my schedule will settle down a bit {hah that idea makes me laugh…it’s not going to happen}, I’m hoping to get on here a bit more often and share a bit more with you guys! K? K!
Here I am, rambling, and not even telling you about one of my favorite, go-to, ready in a jiffy recipes from this summer. This smoothie is just the bees knees! It has all of my favorite flavors, not too sweet, completely filling and a bit of caffeine. I made it as a breakfast to keep me going through my later lunches {camp life} and it was a life saver!
- I used frozen bananas, but you could use regular and then add some ice too.
- I used almond butter, but you can try with your favorite nut butter!
- I added some collagen peptides for an extra boost, but that’s optional.
- I loved me some coconut milk, but if you have a different favorite, try that!
So many options, so many flavors, so many mornings where I made this to get me through a busy day.

Yields 1 smoothie
Ingredients
1 Cup cold brew
1/3 Cup coconut milk {see my preferred brand below!}
2 Tablespoons almond butter
1 Frozen banana, cut into smaller pieces
1 Serving collagen peptides {optional}
Add ice for a thicker smoothie {optional}
Directions
Combine all ingredients into your blender. Blend until smooth. Drink immediately.

Coffee in breakfast smoothie??!! Mm… Yes! Because you know how hard it is to decide between coffee and smoothie every single morning? Coffee always wins of course, but this will be a great compromise ;)
