What a crazy, whirlwind of a week this has been. Nonstop is an understatement! What a start to November! Between a huge rain/windstorm that knocked out power for most of the state, Halloween, and a fun girls’ night at a wine & cheese tasting, I’m a few days late on this post.

I made it specifically so that I could use my new Inspiralizer and it was better than I expected. Better than better, even. Simple enough to make, packed with flavor and made for a perfect make-ahead breakfast for the week.

Oven Roasted Rosemary & Garlic Carrots
The OG of favorite recipes on the blog. This continues to be in the top 10 every month and one I constantly look back at when I need an easy side dish. I have them with grilled burgers in the summer and roasted chicken in the winter.
Perfect every time.

Theres a local restaurant that has a great menu to inspire those in their home kitchen…at least that’s what I think. Last year, I tried to replicate their Stuffed Baked Potato at home and then instantly became obsessed trying to find any and every other meal to prepare in a baked potato…like this one!
