I can honestly say that this past month gave me some of the most wonderful and cherished memories and also some of the hardest times. As I’m sitting here, looking back, I’m trying my hardest to see the light in even those dark times, to cherish memories and to grow. But mostly, memories to share. And as impersonal as I am on this blog, sometimes I share things. What I have focused on this past months {especially this past week} was to find that light, find the positive in every situation. Life is just too short not to.
And with that, I’m positive that these 5 recipes that you loved most last month are fabulous and writing this little post about them is just what I need. Okay? {What a horrible segway.}
Instant Pot Chicken Verde Chili
Oh-my-goodness-gracious this is a recipe I was so proud of creating and…well…then, I absolutely devoured it.
Because who doesn’t love a big ‘ole bowl of chili when it’s snowing out!
Shepherd’s Pie Stuffed Baked Potato
I started teaching myself my way around the kitchen about 7-8 years ago and what I love is that every day I’m still learning something new…a true teacher, huh?
Anyways, I learned that it’s called Shepherd’s Pie when lamb is used and Cottage Pie when beef is used. So, that means, that technically this is a Cottage Pie Stuffed Baked Potato…but I grew up having Shepherd’s Pie at home for dinner and my dad used beef, so, the name of this recipe is sticking.
Salsa Verde Shredded Chicken
You guys have loved this for years and I have loved, even more, watching how you use it! Add to rice or cauliflower rice, put it in a bowl, on a salad…seriously, so many ways that you have rocked this recipe!
Oven Roasted Rosemary & Garlic Carrots
Are you going to judge me when I tell you that roasted carrots are one of my favorite things…and that I order them/make them/eat them whenever I can? …especially when they’re not mushy…especially when they’re full of great flavors.
I promise I won’t judge you when you say that you agree….if you don’t agree, you haven’t tried these.
